A Chicago Icon Comes to New York
When Hogsalt Hospitality brought Au Cheval to New York City in 2019, the restaurant arrived with a reputation already built around obsessive attention to detail, an unmistakable atmosphere and one of the most celebrated burgers in America.
Located at 33 Cortlandt Alley in Manhattan, the larger New York space called for an audio experience capable of carrying that same energy. Pineapple Audio designed and installed a restaurant sound system built to become part of the experience rather than simply sit in the background.
THE DESIGN
Built to Be Turned Up
Au Cheval’s atmosphere calls for sound with presence. The system was designed to perform at higher energy levels while maintaining the character and clarity needed throughout the restaurant.
At the center of the experience is a vintage Bozak rotary mixer paired with custom Pineapple Audio speakers, Powersoft amplification, and Xilica DSP. Together, the system combines an analog-inspired approach to music with modern amplification and processing, creating sound that feels as considered as the food, interiors and service around it.

The finished system helped translate Au Cheval’s distinctive energy into a larger New York setting, delivering the impact and atmosphere needed for a restaurant where the overall experience matters just as much as what arrives at the table.
